GFI protection for multi motor refrigeration unit that requires a water supply

I have a frozen yogurt machine that is powered by 208-230 V and 3 phase power at 60 HZ. This product has a compressor for refrigerant and also requires a water supply.

My question involves GFI protection. The installation manual does not call for a GFI but the drawings provided by the building owner where the product was installed has GFI protection.
I am concerned that this equipment should have GFI protection, since it has a water source within the product that could potentially cause a ground fault if it leaks.

Does anyone have any references that I can refer to or relevant experience on products like this in commercial kitchens?

What is your involvement in this project? Is this a new installation, and if so are you its designer? Or are you investigating a previous failure or accident involving this equipment?

The equipment had an unrelated failure that has brought me in. The equipment had been operating for some time without issue but I am reviewing the installation and protection.
