I have a shed with a separate panel fed from an extra 30 amp breaker on an existing exterior spa panel. The connection is three wires via a 30 foot underground metal conduit. I plan to bond a bare wire to the metal conduit and take that to the shed subpanel to ground. I am thinking I will also drive a grounding rod eight from the conduit and run a single wire to an another acorn on the same metal conduit. Am I sufficiently grounded or do the two ground wires need to be joined?

You are over thinking it and over emphasizing the importance of "The Ground".

If the metal conduit is robust and there is no fear of it corroding in the future you could get away with using it as the equipment ground out to the shed. I would pull four wires, make sure the neutral is floated at the shed, drive two ground rods and connect them to the EGC buss and be done. Truth be told, if it were my house I would skip the ground rods entirely.
