We installed # 1/0 system grounding conductor without a raceway all the the way to grndg rod & water pipe
through the studs of new home.
is this correct??

What do you mean by System Grounding Conductor? Are you talking about a Grounding Electrode Conductor? If so there is no requirement that it be protected by conduit so you are fine.

Maybe not. Where did you run the GEC from/to? No CEE? Most jurisdictions require 2 ground rods (you mention one rod) or first rod to pass resistance test (<25ohms). Where is the water pipe grounded in relationship to where it enters the structure? What size is the service?

If you are just asking can you run the GEC thru the studs w/o raceway, then disregard all that ^. Yes, you can.

The '11 Code actually added wording to confirm that practice in 250.64(B),

If it is a supplemental GEC, 1/0 was overkill, #6 wood have been fine.
