An existing two wire receptacle in a kitchen(not counter top) is to be replaced w/three wire grounding receptacle. A 1P20A breaker supplies the receptacle. #12AC cable to a metal box(w/#18AWG?) ground wire to the box. The sub-feed panel for this circuit has been updated.
What size ground wire for the new receptacle?

AC cable may be used as a ground so just put a pigtail from the box using #12 wire.

That bonding wire in the AC cable can be simply cut off since it is not an EGC. As Dennis said you would need a #12 bonding jumper (based on the OCPD and the #12 AWG conductors in the cable) to the box or another option would be a self-grounding receptacle, no bonding jumper required.
