Hardwiring Range Hood with Corded Plug

New to the forum, so go easy on me…

I recently bought an insert range hood that I was told could be hardwired (asked prior to ordering). I thought this would mean the hood would have an integrated junction box or similar where the corded plug could be removed and replaced with MC or NM for hardwiring. However, the hood does not have this and there are no explicit instructions on hardwiring. So I called and emailed the manufacturer. They told me to cut off the plug and have an electrician wire it. I assume they mean inside a junction box for the splice.

My questions are: how does this not violate NEC 110.3(B) and 400.10?

I would assume cutting the plug and hardwiring would violate 110.3(B) since it’s not called out in the installation instructions

and violate 400.10 since the flexible cord will be behind a closed structure (hood enclosure) and it’s not listed as an exception

Am I missing something?
