I would think a Dentist Exam room (any area where a dentist would "work" on a patient) would fall under the requirements that you use HCF cable or conduit for the installation.
As for Hospital spec grade receps I believe that is up to the spec sheets on your job. I have been allowed to use standard 20A receps for exam rooms.

OK 517.13 would seem to say that:
"...The metal raceway system, or cable armor, or sheath assembly, shall itself qualify as an equipment grounding return path in accordance with 250.118. Type AC, Type MC, Type MI cables shall have an outer metal armor or sheath that is identified as an acceptable grounding return path."
I would take that to mean that as long as the sheath of your armored cable is considered an acceptable ground AND the cable contains an insulated ground (that is found elsewhere in 517) then it would be legal to use in the "Patient care areas"
Check your spec books first. If the engineer speced one thing out and you do another your customer or your inspector may turn you down.

Besides the spec by engineer, the "hospital grade" receps are only reqired at patient bed locations.
See def of patient bed location in 517 and also 517-18(b) and 517-19(b)(2) 1999 NEC sections but should be approx the same in 2002
