If wiring a hospital is HCF MC cable required for everything per code...HVAC, lighting etc. or just devices serving hospital equipment? Thanks.

Not in the business offices for instance, unless they are convertible to patient care locations. There are a zillion rules, you have got to read the whole chapter carefully.

It is only required for areas designated as "patient care". See NEC 517.13. I would also reference NFPA 99 and the FGI Healthcare Guidelines for additional information.
