Hotel remodeled to Assisted Living

Current branch receptacle circuiting for this five story hotel is installed vertically. When one breaker is tripped, portions of eight different rooms lose power. We will be converting this into an Assisted Living facility so I want to make sure I follow article 210.25 for branch circuiting in a dwelling unit. Question is: Since the new rooms will only have a receptacle for a microwave and no other cooking equipment, will this be considered a dwelling unit and could the existing circuiting remain? Hope someone can give some input on this. I will meet with the AHJ soon but want to be prepared.

No, and yes, in that order. You might have to invoke one of the exceptions to 240.24(B). But that should not change from a hotel occupancy to an assisted living occupancy.
