How much is enough ?

Wiring my daughters old farmhouse, they gutted it and added on. I mounted a 200 amp meter/disconnect outside and ran 2/2/2 to 100 amp panel downstairs and put a 100 amp panel upstairs. Upstairs panel was only going to lights and plugs , and washer and dryer. Downstairs 100 amp lights/plugs , range ( I think 60 amps, oven 30 amps , stackable washer/dryer 30 amps. At first they weren’t going to have a/c because they were going to some type of thermal type heat. Now what to do put both a/c ‘s upstairs or will the stairs panel be able to handle one. This is one of those jobs that kept growing. At first I thought I could just put 60 amps upstairs. Is the downstairs panel ok with what’s on it?
 
If you're using #2, most contractors put the AC on the outside panel. The range, too. (It's ussually 40 amps) Some jurisdictions require the #2 AL SER on a 90 amp breaker. If it goes through insulation 70.
 
SOoo, you do have 100A at both locations or 60A?
What happened to the ground coupled hvac? If that is what your talking about.
If you have 100A at each location what is the rest of your loads? 120v window units? Need more accurate info..
 
I have two 100 panels, one upstairs and one downstairs. Upstairs panel has washer and dryer, bathroom and two bedrooms. Downstairs panel has stackable washer/dryer,range,oven , another spare bedroom,and bathroom. If I put the two a/c’s in the meter/disconnect outside and have 100 amp downstairs and 100 upstairs. But I’m concerned with the load on the downstairs panel is it too much. I know not everything will be on at the same time.

MORE is never enough, to quote some taxing authorities?

A 200 A panel is only marginally more $$ than a 100A panel. Gives you all the flexibility you want for a dwelling. I can see keeping costs at absolute minimum if you are building 1000 tract houses, but for your own house or a relative, false frugality.
