How to check the switch board and panel board breakers for the selective coordination setting at field?

Do you want to test the selectivity between breakers, such as zone selective interlock? The manufacture will have specific instructions how to test their breaker combinations.

If you want to check individual breaker settings, you can do either primary injection testing or secondary injection testing.

Ask for documents from owner. Companies maintain records of relay settings and coordination plots as well as equipment ratings.

Do you want to check it or test it? Checking it would imply that you are looking to make sure that whoever did the selective coordination design documented it somewhere and the settings on that document match what is in the field.

Should not be real hard to find that document and do that kind of checking.

That depends on the breaker.older units had dials which you could look at, most probably have a display you need to scroll through, and some require computer software and a communications connection.
