How to size sub-panels off a service

So I've got a 200A service panel pedestal out in my field, my 200A house panel is connected to the bottom of the bussing in a fed-through manner. My 100A shop panel is sub-fed (100A breaker) off my house panel. How exactly does one determine how many sub-panels-of whatever size-can be fed (sub-fed, thru-fed) from a panel?

The only thing that matters is the calculted load connected to the service not the number and sizes of the breakers and panels.

You could supply a dozen 200 amp sub panels from one 200 amp service as long as the total calculated load connected to that service is under 200 amps.

Ah...

So what you're saying is, if I wanted to, (not that it would be practical) I could put multiple 200A panels downstream, each with a calculated load of say, 20A until they totaled the 200A limit on the service. Is that so? Could I also put a panel rated for 400A fed by a 200A service (I know it would be a waste of a panel) as long as the calculated load did not exceed the rating of the service?
