How to size these conductors?

I should know this but I'm just unsure. I was asked to install a couple of high hats in a showcase which is in an employee break room in a store. I was planning on surface mounting a 1900 box with a single pole, run mc or bx up to the high hats and then use sj cord and plug the 1900 into a nearby receptacle. The receptacle is on a 20a circuit, would I have to use 12 gauge or could I get by with 14?
 
I'm not sure you can justify using SJx cord to wire a switch and meet 400.7.

Frequent interchange?

Portable showcase?

The 14 AWG is probably not an issue (400.13), but 400.8(1) . . .
 
Hi Volta, thanks for the response. Yeah, it would be sooo much easier to us the sj cord but 400.8(1) did come to mind as this would be a permanent install, blaah. Thanks for the 400.13 reference as well.
