Is there a good general rule of thumb on providing the right type of disconnect for HVAC equipment such as air handlers, boilers, condensers etc.?

A lot of the time the mfg. says install fused disc. sw. or service (toggle) switch, as req'd by code.

These are generally for under 20A equipment, although same question for lager 40A + equip.

Thanks

The most common product used here is either a rated wall switch for small single phase loads or a fusible or non-fusible pull-out unless aesthetics are an issue. (The selection is normally dictated by cost as various options are available)
