For installations in the USA, can devices with IEC only ratings be used? Specifically, I have a IEC hazardous area rated pressure switch that I would like to use in a Class 1 Div2 area.

I am curious just how you come to this conclusion.
- IS and nonincendive still require, "...wiring methods permitted for unclassified locations." [Sections 501.10(B)(3) and 504.20]
- Purged/pressurized would still require recognized equipment; i.e., approved. [Section 110.2]
- In both cases above, no AHJ will accept IEC only rated equipment unless they are very familiar with "Ex" ratings (like me)

purged/pressurized equipment effectively creates an unclassified volume where devices not otherwise suitable can be used. if you are claiming you can't use this pressure switch in a purged/pressurized environment, you are effectively saying it can't be used anywhere, and I don't see how that can be. There is no requirement in the code that pressure switches be listed.
as for IS circuits, IIRC, there is a specific statement that simple devices (like switches) are not required to be listed.

BTW I never once said listed, although you may want to review 501.105 (B). Some of the exceptions might be acceptable where the AHJ understands IEC markings.
I also understand purged/pressurized; I may not favor it, but I do understand it.
