I had the chance to talk with the owner of a high end kitchen appliance place today. They are providing alot of the appliances that are being installed in our downtown area condos. He said he had several unhappy customers because they bought 240 volt appliances, and yet their condos are 120/208. Apparently they are suffering from excessive warm up times with higher temperatures on the ranges. He said the electricians are provided the specs, but the HO's are being cheap and don't want to pay to have the proper voltage. We both laughed at how people will drop $100,000 for a kitchen, but are cheap with the electrical.

I believe c2500 means, at a low setting heat up time is not noticeable, but setting the burner at a maximum setting the additional time required is noticed

Do you mean pay for a buck-boost transformer, or order the correct voltage?
