When drawings/ spec calls for a particular size stub up( e.g. 3/4", 1" etc.) for IT/Data have you ever used greenfield/flex instead of hard conduit( EMT etc.)?

Does the spec say what type of raceway or does it just say a 3/4" or 1" raceway? FMC is a raceway so if the spec just says raceway then that would comply.

If the specs say conduit then FMC would be compliant but not EMT.
Comparing EMT and FMC for stubbing into a suspended ceiling with one 90, with EMT, the cables could be easily pushed in, with FMC and a 90 likely would require a fish tape.
