I am a maintenance electrician and I need to move a 16 KVA UPS. Is there a max length by code you can run #2 SO cord?

Strongly suggest you take a careful look at 400.7 and 400.8.
Not so much a maximum length as a prohibition against using cords as a substitute for permanent wiring.
