Kitchen Countertop Receptacles

Can anyone fathom a 15 amp countertop receptacle in the kitchen? Code continually states that all 15 and 20 amp receptacles in kitchen countertops be GFCI protected, but my mine will not conceive installing a 15 amp receptacle above (not below). I would love to understand this more....

There is no issue using 15 amp receptacles on a kitchen counter as long as it is not a dedicated circuit with a single receptacle- duplex outlet is two receptacles.
 
See 210.21(B). The 20A circuits supplying the countertop (210.52(B)(1)) may have 15A devices on them.

There's not too many truly 20A appliances for kitchens.

All 15A devices are rated for 20A feed through.
