Please see attached sketch which is part of Pizza shop with Janitor room (Jan), Dish Wash Area, Prep Area, Service Area, Paddle Area which has oven. All these areas are Not separated by wall and one can walk in between them.

Paddle Area has sink and oven.

Service Area has sink, beer cooler, salad fridge, soda cooler, Tables

Dishwash area has sink, dishwasher

Prep Area has sink and where pizza dough is prep

Jan Area has sinks water heater etc

I read the defintion of kitchen NEC 2017 section 100 however I am confused in something like attached sketch would combinations of all areas: Paddle Area, Service Area, Dishwash Area, Prep Area be considered kitchen since they are not separated by wall or would Prep Area, Paddle Area, Jan area be considered kitchen? Which areas are considered kitchen by NEC 2017? Your opinion please

Since area is not defined in the code, the only opinion that makes any difference here is the opinion of the AHJ that will inspect the installation.

However based on the occupancy, I would call everything other than the janitors area the kitchen area, but again, my opinion does not count...only the local AHJ's counts.

What is a paddle area?
Many years ago I worked at a local pizzeria.
The oven was in the middle of the store, and everyone ran around the oven. Some pies were dropped and one person knocked into the stove when people bumped into each other.

Im guessing in order to keep everything organized and safe the paddle area is the cooks area.
Pies are made in the service area, transferred to the paddle area where they are placed in the oven to be cooked. Once done, transferred back to the service area for cutting and prepared for serving or boxed.
