Knob and tube wiring and 100 amp service

I'm buying a house with both knob and tube and also partially upgraded to 100 amp service. Will it be possible to change out some 2 prong outlets to 3 prong? An electrician told me no because it's 2 prong service. I'd also like to run ceiling fans, will they be difficult to hook up from maybe the light switch. There is now the light on the wall, not the ceiling.
