Can you use a dimmer on low voltage LED's ? Or will it hurt the transformer?

It depends on the manufacture. I would not dim an LED without checking with the manufacturer as some can be dimmed while others cannot. Usually they recommend a specific dimmer that is made for LED if it can, in fact, be dimmed.

you could look up the part number and check the website for info. expensive ones such as Cree led replacements for cans are available dimmable, if not all dimmable.
