I would like to find LED strip style lighting that is approved for submerged swimming pool applications.

I see such lighting that is listed as IP68 wet location rated - and it says it can be submerged - but I don't know if that means it is NEC approved for such situations.

and see if that takes you where you want to go.

Any light fixture in a pool must be approved for pools, including low voltage lights. The transformer must also be approved. I believe the tranies for pools are of the isolation style
 
Fiber optic is the way to go. This is my pool.

That's a unique light. But the only problem with LED is pixel failure. If one goes bad from defect in, say what ever time frame, will you be able to replace it? Fiber won't have that issue. Just a thought.
