starting to see more and more led tape light installed in kitchens, bookcases, and the like. What are the acceptable wiring methods besides nm cable?Would thermostat cable be one of them?

If you are using a CL2 listed wire you still need to utilize a class 3 wiring method when going through a wall, floor, or ceiling correct?

anything that is rated for use in walls is okay in a residence. The secondary of the xfmr is a class 2 circuit. You do not need NM or chapter 3 wiring methods to supply the 12 or 24V. For details see 725.xxx.

Most anything other than lamp cord or some speaker wire is rated for in-wall use.

eta: 18 or 20/2 is fine - we use the latter because the available connectors we like to connect to the LED leads only accept 19ga and smaller wire. I wouldn't use catx cable, those solid 24ga wires break very easily. Seen and fixed a load of it used as thermostat wire because 18/5-18/8 was 'too expensive'.

Take a look at 411.5(A) for types of conductors permitted to be concealed or extending through a wall, floor, or ceiling using Low Voltage lighting.

411.5(A) was the reason I questioned using CL2 wire through walls, floors and ceilings. It looks like unless it is a class 3 wiring method or the wiring came with the class 2 power source then you cannot penetrate floors, walls, and ceilings....but maybe I'm reading too much into it.

I personally do not see an issue penetrating with CL2 wiring but not sure how the code is suppose to be interpreted here.

When I read 411.5(A)(2) I read it as CL2 wiring that is energized by a Listed Class 2 power supply in accordance with 725.130. I do not read that section as requiring that the CL2 wiring come with the CL2 power supply.

JMHO.
