Lighting requirements in food prep areas.

What are the code requirements for lights above areas where food is prepared and/or served? Do the fixtures have to have certain lenses to capture fragments from possible ruptured lamps? Can they have louvers instead of lenses? What are the clearances or distances to maintain around food where lensed or special fixtures must be used and how close to food can a non lensed fixture be installed?

What code should I review to find the answers to the above questions?

That is a sanitation or health code.

Going from memory louvers will not meet the requirement.

The fixtures have to be of an enclosed design, or you can put sleeves over the lamps, or you can buy 'shattershield' lamps which are factory encapsulated.

Lenses are required in Illinois per the Illinois Dept. of Public Health. I don't know if the sleeves or shattershield lamps are acceptable subitutions.
