Load Calculation for Non Dwelling Unit

I have a existing restaurant. The existing Power is 600AMP/208V/3P
It has mix use of Electric and Gas cooking equipment.
But I don't know what type of equipment was there before, so I decided to use section 220.40 to do my load calculation

Could you please review my load calculation to see if I did them correctly or if I missed any demand factors I could use for HVAC and Refrigeration Load.

I used a 65% Demand Factor for the Hot Water Heater under the Demand Factor for Kitchen Equipment.
FYI, there are more than 6 Kitchen Equipment, but I just listed a few and summed up the rest.

Also are there really 100 receptacles and kitchen equipment that is 20kw...

I haven't had time to look too closely but it seem like that is a really high number

did you take advantage of section 220.88
So if I use the optional method in Section 220.88, do I use all the loads at 100% with no demand factor and than use Table 220.88?
Also are there really 100 receptacles and kitchen equipment that is 20kw...

I haven't had time to look too closely but it seem like that is a really high number
I just put a random number to see if my formula was going to work for when it was over 10kVA.
