Low Voltage (dimming) cable in church attic?

Picture an 100+ year old church with cross truss attic. Not really accessible but you can climb down to some boards along one side that serve as a catwalk.

Wiring for replacement lighting – if MC cable were used for the power wiring:

What cable would be appropriate for the control (dimming) wiring?
