I'm not sure what sorts of "dos and don'ts" you are looking for, but start looking at Article 800.

The NEC has the rules for installing cable, artielcs 725, and all of chapter 8. But many of the requirements are performance related and not NEC issues. I would suggest you contact Mike Holts office or online and get his new and excellent Understanding Low Voltge and Limited Energy Systems.
Then go to BICSI.com (they are the telemcom folks) and look for their inside cabling handbook, its about $100 and is 300 pages, that will help you get started.
