I'm using 3 sets of 250 kcmil for voltage drop. that many conductors won't fit in my subpanel. what is the connector that will join 3 250 kcmil to 1 4/0?

Not sure what your load is but 3-sets of 250 transitioning back to a single 4/0 seems to imply a long distance.
Here are some numbers for comparison.
Assumed your load is 180 amps.
480-3P PF=0.85 can go 1200' with VD of 1.9%
480-3P PF=1.00 can go 1700' with VD of 1.99%
208-3P PF=0.85 can go 550' with VD of 2.01%
208-3P PF=1.00 can go 750' with VD of 2.02%
How did you arrive at those numbers without considering current?
