Maximum fuse size specified for a 460V/3phase mech equipment is 80Amps, with MCA 75.5Amps. I wonder a 90 Amp breaker is oversized for this?

If maximum fuse size rather than maximum OCPD size is specified you cannot use a breaker anyway.
And a 90A fuse would be too large.

When the panelboard was designed, the equipment called for 90Amp MOP and I have asked them to provide 90Amp MOCP in the panelboard. But now the mech contractors have submitted a slightly different model that calls out for 80Amp max fuse size. So what are the other options?

90A panelboard breaker, as ordered.
80AT/100AF fused disconnect.

Backcharge mech contractors for the disconnect, misc mat'ls, and extra labor.

So that means I need to use a fused disconnect switch of 80Amps and a 80A breaker within the panelboard ??

The breaker rating in the panel does not matter much. The rating can pretty much be whatever you want to make it and still meet code as long as you abide by the tap rules, or the conductors coming off the CB are not a tap.
