MC cable

I know that MC is required in places of gathering 100 people or more. I have wired a few churches years ago and I remember not running MC to the lights or switches only for the receptacles. This was for my old boss. My question is... Has this changed at all? Can I still do this or do the switches/legs need to be MC also. I might take on elec. maintenance for a group of churches. Thx
