Meter can rating

We have a job where we are feeding two 3-meter cans. Each 3-meter can is rated at 225a. The service is 400a. The original plan was to go from the 400a disco to a gutter box (rated for the 400a), then use 2/0 taps to feed each of the two 3-meter cans. Does this satisfy the 225a rating of the meter cans even though there is still 400a OCPD prior to the taps?

The taps only need be rated for the calculated loads of the 3 meter base - not it's rating - unless your using conductors in excess of the meter bases rating - which you should not.

Also the tap rules apply to the distance between OCP's - are there any breakers in the meter bases? See 240.21

Thinking of this more - you only have 6 services - why do you need a 400a disco? Just size the wire to the trough for the total load calc and have no more than 6 service dico's with taps sized for the load of the meters. (Either OCP in the meters or adjacent to them.)

there is a 7th meter for the house that we are not messing with, so we will need the disco. I just wasn't positive about the 400a disco and the 225a rating of the meter base.

Yeah - that 7th one puts you with a main disco...

And between the tap and the disconnecting means for each unit you will be in feeder tap rules. Make a very carefull study of 240.21(B) to see where your installation fits. There aint nothing like doing a service twice.... ;)
