Quick question,

New construction home I’m wondering if there’s anything that says I have to install a box for a microwave hood combo for my rough inspection (interior wall) I’ve always just had the wire stick out and install 4 square with single receptacle inside the cabinet when installed. It’s been about 3 years since I’ve wired new construction.

Thanks in advance.

No requirement. If the inspector is overbearing about it, just bang in an adjustable box , don't strip the sheath off the cable, and set it to 1/2" before inspection, and remove the box after inspection and proceed as the usual inside the cabinet. If he fusses at trim, remind him that the carpenters on this job cut box holes with ax hammers so you thought your method best of the choices........... It's for the children

I see no reason why you cannot stick out the cable and install the surface mount box later.
