Where can I find what the min bend radius for wire is, in particular, size #1 wire for a motor starter?

The NEC section is 300.34. Which may differ from some cable installation books.

Minimum wire bending space at terminations is diiferent than wire bending radius. There is no minimum wire bending radius for 600V conductors, except the insulation is not allowed to be damaged. Wire bending space at terminations provides room to insert and remove conductors.

I will have to retract on 300.34 as it does not necessarily apply to the OP as it is for MV cable, and is consistent with ICEA.

In that regard, ICEA says:
mil thickness of 155 and less is 4x for OD up to 1", 5x for OD gretaer than 1" up to 2", and 6x for over 2".
Mil thickness of 170 to 310 - 5x for OD up to 1", 6x for OD gretaer than 1" up to 2", and 7x for over 2".
Mil thickness of 325 and over - N/a for OD up to 1", 7x for OD gretaer than 1" up to 2", and 8x for over 2".
