For either the 5-wire harness or the 8-wire harness feeding modular furniture, three-circuit or four-circuit respectively, must the breakers feeding these have handle ties?

Only the circuits configured with a common neutral need to be handle tied.
It is not uncommon to have three single pole handled tied breakers in one panel supplying general loads with another single pole breaker in an entirely different panel supplying the computer power.
