I have a new commercial facility that i am building and have a dishwashing room on the interior of the building. There are 2 washing motors one is 125 amp and the other is 60 amp, i have two disconnects that i am mounting within sight of the motors on an adjacent wall and they are weatherproof. I have been reading the code and am using a dual-element time delay fuse and will rate the fuse at 175% of the amperage. I have read further in section IX from 430.101 to 430.113 and have yet to find a part that specifies that i have to use a fused disconnect, is this just an option? The motor is thermally protected.

The thermal protection on the motor is "overload protection". The motor (and its branch circuit or feeder conductors) still require "ground-fault" and "short circuit" protection. Either a fuse OR a circuit breaker can normally provide this protection. But, if a device is marked "Maximum Fuse Size", fuses are required.
