Multiple Conduit in Trench

A customer has two buildings, a workshop and an art studio, in his backyard, with no power. He is planning a major remodel to the main house and will probably be installing a 400 amp main panel. The workshop and art studio will each be supplied by 200 amp sub-panels. The customer has started the process of trenching to these buildings so that conduit can be installed. I recommended 2.5 inch conduit to each building to accommodate for 3/0 conductor and the long pull.

1) Is it correct per NEC to install the 2.5 inch PVC conduit side by side, or over and under, directly next to each other in the trench? The trench of course will be about 2 feet deep per NEC underground requirements.

2) Is there a spacing requirement between each of these conduits?

3) Is there a rack system that can be used underground for this type of installation?
