Generally speaking in residential construction when adding sub panels which code articles would one refrence to for wire sizing of feeders to sub after panel size has been determined. 310.15(B)(6)only goes as small as 100 amps so would you use 310.16 and if so are you required to use a particular temp rating?
For example purposes only lets say you have a 200 amp main and would like to install a 60 amp sub and want to use SEC copper???

You are correct in that this is not the main power feeder to a dwelling unit and table 310.15(B)(6) does not apply. At this point, it is just a feeder and if you wish to use SE cable, it would have to be SER to have enough conductors to wire the downstream distribution panelboard correctly. To size it, you need to go to Article 220 and then to the ampacity tables in Article 310 to size the cable. :D
