Need advice - installing subpanel to detached garage

Hi,

I'm installing a 30 amp subpanel (interior, surface mount) to a detached garage and need some advice. NOTE: I'm in California.

I'm using 10/3 cable (from the main panel on the house) buried 18" deep in gray schedule 40 1.25 inch PVC.

Question 1: how do I connect the conduit to the panel? I'm told that the PVC can't be used above ground but see many photos of the PVC running directly to the panel. Do I need to transition to EMT above ground? I need to know exactly which connectors to use to go up the wall, into the wall, then up to and inside the panel.

Question 2: how do the pros typically handle cable transitions running from drywalled sections of a garage to non-drywalled sections? Do they use armored cable for the entire run or NMB behind the drywall and then cover the NMB in armored where it emerges from behind the drywall? If the latter, exactly how does that transition work? I've read that you can't use NMB in conduit, but I've also read that you can.
