New Restaurant and how to apply table 220.56 for feeder/service calculation.

Hi All,

I have a new restaurant with a single phase 120/240V 800A service that we are installing. When calculating load I am not sure what can be included when using the demand factor table for kitchen equipment. I was originally thinking I could only use the electric griddle, water heaters and dishwasher. I am now realizing that I should be able to do all of the under counter refrigerators, ice machine, walk in cooler. Does anyone have any experience using this table for calculating service and feeders for a new restaurant? Is it OK to also include the dishwasher machines for the bar side of the restaurant? How about hood fan motors and make up air heaters for preheating of return air for hood system.
Here is the list of equipment that I would like to apply the demand table to:

Hi David, Thanks for getting back. Sounds good I was also feeling like the hood and make up air equipment might be out of the realm of kitchen equipment. I see now that 220.56 specifically states that these demand factors shall not apply to ventilation equipment which would be my hood fans and make up air fans.
 
Do keep in mind that restaurants can be packed with hungry guests. Thus, many of the items you listed could easily be operating at the same time and for the duration of the rush hour. The NEC demand factors are optional maximums (i.e., limiting the extent to which you can lower the calculated load).

I suggest talking with the owner, to get a feeling of their cooking plans, before blindly using the maximum allowable demand factors.
 
Charlie, Good thinking, I appreciate this input. There are a couple of items on my list that i know are either intermittent, like the dishwasher booster heater or start high and then settle down once up to temp, like the pizza ovens. I counting on equipment like this giving me some wiggle room to use the demand factors allowed.
