My question is - the code states that nm-b cable is not allowed in a shallow chase in masonary block (protected by a metal strip) and covered over with plaster, adobe or a similar finish. How about gypsum drywall? Is this a similar finish since it is not troweled on?

The concern with masonry block is because of a possible damp/wet condition. Gypsum drywall won't have this condition(or it better not). You still would need metal protection covering the cable.
