Not all restaurant kitchens are bad....

Last Friday my boss and I did a small job at a Panda Express Chinese restaurant at a local mall. It was probably one of the cleanest and neatest restaurant kitchens I had even seen, although it was extremely cramped. Being a large chain restaurant located in a mall may have something to do with it, but it was encouraging at any rate.
 
Some of the cleanest one's I've been in have been little hole-in-the-wall places, and some of the dirtiest have been pretty big and busy places. You just never know. I eat in them all anyhow. I think I have a steel gut.
 
the panda kitchens were started as a ma and pop chain - extremely well run, very good to employees etc etc. despite what I may have said about chinese rest. kitchens, that particular company stands out.
 
I ate Chinese for lunch on Friday. It was buffet. They had chicken on a stick, but it was all red colored. I think it was chicken. I mean, heck, it kinda tasted like chicken. I got seconds on the next go round. Mmmmmm, chicken.
This particular place, not very clean. Not nasty dirty or anything, not just as clean as I'd prefer. But the food sure is excellent.
 
There are ethinic markets in my area that sell every type of animal & insect imaginable. After NASA broadcast that Beatles song into deep space Feb 4th, I wondered what hungry space monsters would want to eat, and if they keep clean kitchens?

When I installed commercial fire & burglar alarms 7 years back, I remember one restaurant chain with consistantly clean kitchens, it was called El Torito. This chain's kitchens were always spotless; they must have budgeted and trained for professional cleaning as a policy.

While I've heard about a fast food chain, In-and-Out Burger, with spotless food-prep areas from the patrens perspective, consistantly clean kitchens are the exception in my area..

Wendy's, Subway have nice clean kitchens. Little, Mexican food restraunts scare me. Same thing with Ma and Pop chinese food.
 
Installed a security system and PA in a Kraft Macaroni and cheese plant many years ago. We were in every nook and crany of this huge complex. The deepest darkest corners and I was amazed at how clean it was. Have felt good eating the stuff ever since then.:smile:
