any ideas on the best way to wire one single phase,120V, fracational HP exhaust fan from mutliple control points(single-pole switches)? The fan is being used for exhaust at benches. Is it just as simple as wiring single pole switches at each bench to the exhaust fan?

Yup, as long as it is accepted that any switch turns the fan on and it will remain on until every switch is off. Sounds like what you want in this situation- all switches in parallel.

Why not use 2 3 ways and some 4 ways and have option to turn it off too ?
or maybe some timers so it goes off

low voltage would be the easiest and the cheapest. Just get a locking relay, I think ge still makes one, use momentary contact switches at each location. easy to conceal and wire.
