I have nichrome heaters that can range from single elements that operate a 2kw up to 20KW using multiple elements. The humidity in this environment is controlled, and can range from 1% all the way up to 95%. The temperature can change rapidly as well from -70 C to 190 C.
I am trying to find documentation within NFPA 70, or any UL document, that addresses the use of open Nichrome heaters in this type of environment. I currently use B-Curve breakers, which are quick-trip breakers, but still thermo-magnetic so there is some overload protection. There are also temperature limit controllers that monitor any thermal overload on the heaters.
