I could have sworn I’ve seen a code that says you do not need a disconnect in an outbuilding if it is only supplied by one circuit or one multiwire branch circuit. Is this correct or am I crazy? I can’t find the code anywhere in art 225

Still need a disconnecting means but it can be a single pole switch for a single circuit. What you do not need is a grounding electrode system. Look at 225.32.

... it can be a single pole switch ...

This. Which is why you probably thought you didn't need it if you always picture this in your mind for "disconnect":

Is a multi circuit considered 1 circuit or 2? I’m looking at 225.39(b) and it says minimum is 30 amp. Can’t I run a 12-3 and put the circuits on a 2 pole 20 amp circuit and have a non fused pullout disco on the building?

A MWBC is one circuit and yes to 20A circuit using 12/3 UF on a 2P breaker with non fused pull out disco.

A multi-pole snap switch can be fed by multiple circuits if certain conditions are met, correct?

You can use a multi-pole snap switch but it gets crowded really quick.
Some use an AC pullout for the cheap price and the additional room for makeup.

Although allowed as a disconnect, and I've used them myself, I don't like either one of those, but that's just me.

Why?

Because in both of those cases there is no insulated neutral bar in the disconnect and neutral is generally pulled straight through them and I despise troubleshooting voltage at a so called "Disconnect" where I can't get a probe on the neutral conductor, but that's just me.
