i am going to wire an assembly area at a church with lights and 120 volt receptacles. It has a complete roof over a concrete floor. All four sides are totally open. It is classified as a damp area. Can I use type UF wire above 8 feet and pvc or emt below 8’? I think I can use indoor rated junction boxes throughout. My concern is that it is an assembly area and could hold more than 100 people and may require emt or mc cable. Any feedback is welcome.​
 
I wouldn't recommend using indoor-rated anything. As a pavilion, I'm not sure the assembly rules apply, but others here will know.

I think you would have a problem using UF cable as you described

340.10 Uses Permitted.
Type UF cable shall be permitted as follows:
(4) Installed as nonmetallic-sheathed cable. Where so installed, the installation and conductor requirements shall comply with Parts II and III of Article 334 and shall be of the multiconductor typ
 
In wet - damp locations the recpt screws on bell boxes rust. I would use PVC boxes and drill a 1/8" drain hole in the bottom of each. PVC conduit, etc can look nice if care is taken during installation
EMT would also be an option
