Outdoor Boxes (Light and Outlet)

New construction of metal-clad cabin. I'm installing lights at both back door and front decks. Outlets at front and back of home.
From what I have deduced, standard boxes are okay as long as the outlets are GFCI protected with an "in-use" protective cover and lights are outdoor lights.
That doesn't quite feel right to me from a safety perspective. Do the boxes not need to be watertight or covered by a vapour barrier of some type?

If I were to install a standard box, I would need a box extension because the siding of my home is about 3/4 thick after spacers and metal are considered. Putting a standard box in requires making the hole excessively large due to the mounting brackets, etc. and would thus leave gaps that wouldn't be covered by the standard in-use covers. I really expected to find water tight boxes sold at the local big-box store, but i have not seen them.

I think I'm missing something... and it's probably obvious.

What is the proper solution here?
