If I have a 208 single phase motor that needs an overload relay, Can I just protect 1 line or do I have to protect both?

For any two wire supplied motor you only need overload sensing device in one of the supply lines. What goes in one conductor must go out the other as long as there is no ground faults within the motor.

And hopefully a ground fault in the motor would trip a breaker rather than needing the overload to catch it.
