Save it if you want, but saving as image files takes less room.

Shred your documents if you are concerned about security of disposed items.

There are companies that do nothing but shred documents for other companies if you have a lot to do and don't want to do it yourself.

Good point. This is what we do, although we keep paper copies of a lot of things. We have a custom-built database for tracking everything to do with a customer or job. If it can come out of a computer or scanner, it goes in the database.
