What size parallel copper conductors are needed for an 800 amp service?

Not nearly enough info to say.

Maybe a pair of 500 copper, or maybe not.

Depends on the load, if you are running them together or not etc.

As Bob stated you would need to provide more information starting with the calculated load. In separate raceways 4 sets of #3/0 would give you 800 amps or possibly 2 sets of 500's in separate raceways depending on your calculated load.
