I know you're not suppose to run plumbing lines (domestic water, sanitary, etc.) throuhg electrical closets/equipment rooms; but I can't find a specific code reference to this. Is in the NEC, NFPA, or local codes?

In general there is no rule that prohibits the installation of plumbing or other piping in electrical closets or rooms. There are some limits as to where this piping may be installed and those are found in the section that Dennis cited.

450.47 has something to say about foreign pipes and ducts running through a "transformer vault." There is no similar restriction for an electrical room or electrical closet.
